Callum’s journey began in Cambridge. Tasting the finest things of life so early on it gave him an enthusiasm and passion for quality and freshness which still to this day is what drives him in the Kitchen at The Verzon.
Working for Michel Roux and Nigel Howarth at a young age gave him a pedigree grounding and experiences. Relocating to Herefordshire 3 years ago he now plys his trade to the vast food orchard that is Herefordshire with its World renowned Herefordshire beef, apples, beers an even potatoes from the local ‘Chase Distillery’ farm from where they make their Multi-award winning Vodka’s and Gins. Also inextricably linked due to Kate Chase being the owner and operator of The Verzon House Hotel.
Chef Callum’s menus are a taste of Herefordshire, using local game, wild mushrooms and sourcing all ingredients from within the county is what makes them extra special.
Callum was recently featured in Signature Chefs Recipe Book alongside Chase Cocktails matching.
